I am assuming that you are refering to the "throttle number" printed on the train-consist.   This number comes from the train-consist number.  You can change this number from:

- on the "Switchlist preview":  "Change consist", or at "Update Conductor power or caboose"

- or from "Power desk/Assign power directly to train" or from

-  "Power desk/List and Assign power and (caboose) to consist".

OK?

(Caboose) because you may have chosen something else (cabin, van,...) to call a caboose.
